Watermelon Salad

This is my mum's favourite salad. She has to have this once every 2 weeks or she'll miss it!

It's sweet, juicy, refreshing, and perfectly balanced by the savoury feta cheese.

Servings: About 6

  1. Watermelon x ¼ big oblong watermelon, cut into small cubes

  2. Salad leaves x 200-250g

  3. Japanese cucumber x 1, sliced into rounds

  4. Red onion x ½, quartered and then sliced into thin quarter-rounds (approx 60g of onion)

  5. Mint leaves x 6-8, chopped into thin strips

  6. Basil leaves x 5-6, chopped into thin strips

  7. Apetina white cheese in olive oil and herbs x 1 packet

  8. Olive oil x a drizzle

  9. Pink salt, freshly grated

  10. Black pepper, freshly grated

  1. Cut all items according to instructions above.

  2. Arrange the salad leaves in the salad bowl with a hole in the centre.

  3. Distribute the Japanese cucumber and red onions around the salad leaves.

  4. Pile the watermelon cubes in the centre of the salad.

  5. Crumble the white cheese with your hands and drizzle the olive oil in the packet all over the salad ingredients.

  6. Drizzle more olive oil on top.

  7. Spinkle the chopped mint and basil leaves all over the top.

  8. Grate some salt and black pepper over the dish.

  9. Serve and enjoy!
