Teriyaki Tofu
Crispy, savoury teriyaki tofu is a great meat-free alternative to teriyaki chicken or salmon!
I eat this with rice or in a wrap.
INGREDIENTS

Tofu
Tau kwa (firm tofu) x 2
Potato starch x 4 tbsp
Salt x ¼ tsp
Pepper x a few shakes
Cooking oil
Teriyaki Sauce
Soy sauce x 2 tbsp
Maple syrup x 1 tbsp
You can use sugar if you prefer. I don't like to cook with processed sugar for health reasons.
Sake x 1 tbsp
Mirin x 1 tbsp
Water x 3 tbsp
Corn flour x 2 tsp mixed with 1 tbsp water to form slurry
Garnish / Wrap Ingredients (Optional)
Sesame seeds

HOW TO COOK
1. Cut the tofu into fingers.
2. Mix 4 tbsp of potato starch with ¼ tsp of pink salt and a few shakes of pepper.
3. Coat the tofu fingers in the potato starch mixture.
4. Heat about 5 tbsp of cooking oil in a pan. The oil should cover around ⅔ of your pan's base. Adjust the amount of oil if you're using a different sized pan.
5. Pan fry the tofu fingers until they're crispy and golden brown.
6. Put the crispy fried tofu on a plate lined with a kitchen towel to drain off the oil.
7. Make the teriyaki sauce. Skip these steps if you're using store bought sauce.
7a. Add soy sauce, sake, mirin, water, maple syrup and corn flour slurry into a small saucepan.
7b. Boil for about 1 min to cook the corn flour and evaporate the alcohol from the sake.
7c. Taste the sauce. If you find it too salty, add more water and corn flour if necessary.
7d. The sauce should have a syrupy consistency.
8. Drizzle the teriyaki sauce over the fried tofu.
9. Optional: Sprinkle some sesame seeds on it.
10. Serve warm with rice, or in a wrap. If you're making a wrap, assemble the wrap as shown in the picture below.
