Steamed Fish with Tomatoes and Black Beans
The tomatoes in this dish are sour and refreshing!
INGREDIENTS

Ingredients
Preserved Black Beans 1.5 tbsp
Garlic 4 cloves
Ginger thumb sized
Tomatoes 2
Barramundi Fillet 500g
HOW TO COOK
1. Mince the garlic, ginger and black beans. I blended mine coarsely.
2. Cut the tomato into wedges.
3. Wash and pat dry fish fillet, then salt lightly.
4. Lay fish in steamer plate, and place garlic, ginger and black bean mix evenly on top of the fish. Surround with tomatoes. Steam on medium heat for 12 minutes or until just cooked.
5. Serve with white rice.
TIPS
1. You can use any white fish for this. You can even use Salmon, which has a much stronger taste.
2. Do not overcook- you can check by cutting the fish at the thickest part with a knife. If it is evenly cooked through you are done!
